GANACHE

GANACHE –  USED IN HOT WEATHER ONLY   

Is white chocolate or milk chocolate boiled with double cream! Tastes yummy! Ganache will be used on cakes especially in warm / humid weather or for a cake that needs more stability for example tiered cakes. 

I only use Ganache in the summer months - Usually from June until the weather cools down. This is for a crumb coat only. so the filling is still buttercream as normal. The crumb coat of the cake secures all the crumbs of the side of the cake, shapes the cake and gives the cake structure and stability and something for the deco  such as fondant to stick to. 

In the summer butter melts, chocolate has a higher melting point than butter, it dries a lot firmer and isnt as soft. You may find your cake slightly harder to slice through, but this is how it is meant to be so that it protects your cake from melting in hot humid weather. Ganache has been the saviour. I try to flavour it a little also with a vanilla flavouring. See the diagram to explain crumb coating. 

If used it will be on your care sheet you get with your cake to let you know it has been used. If you have any problems of me using ganache, please let me know. As it will be used as and where i see fit depending on the cake design. 
Any cake left overs - slice your cake into portions, wrap with cling film, and place in air tight container. you can keep it out the fridge a day or so, or place in the fridge to keep it longer, and bring to room temp. so it goes back to soft again.

This disclaimer is to certify when you collect the cake, you are accepting that the design is acceptable and to the agreed design discussed at the time of booking, therefor no complaint on the design shall be made after collection.

Any damages or contamination is the responsibility of the customer and Kelly’s Cakes Bishop Auckland cannot be held responsible after the cake has left the property. If any problems should occur, You must contact me within a few hours of collection.

If someone is collecting the cake on your behalf, they know this information. All cakes are photographed before leaving my kitchen, also a picture will be on your care sheet you get with your cake.

HANDLING YOUR CAKE 

Place both hands under the box to distribute the weight evenly when carrying the box. Be careful at the sides where there could be decorations close to the board as it may damage your cake. Do not carry it close to your chest as it will push the sides of the box in and be on a slant. The corrugated cake boards can flex and bend if not fully supported causing the cake to torque, leaving cracks in the cake. Be careful to ensure the cake is always flat even when travelling.

TRANSPORTING

Make sure you have adequate transport with plenty of space, clean, and free from debris. Travel with the air con on in the car.

Don’t Move the cake too much too much movement can weaken the cake structure.

Make sure your cake is suitably placed in your car, The cake must be completely flat, the footwell for smaller cakes & the boot is ideal for larger cakes, some cake boxes can be up to 20 inch wide & very tall. DO NOT place the cake on your seats or your knee these are uneven and all it takes is a few degrees of slope or sharp breaking for an accident to occur.

 

Nonslip mats are ideal to place under your cake, also pack clean towels around the cake box to stop the box from sliding in the boot.

 

Drive slowly & carefully to reduce the risk of damage, turn the heating off and use the air con. Every little bump and break effects the solidity of your cake.

 

STORING

Store your cake in a cool clean area, away from heat and cold drafts, Handle cake as little as possible. Keep your cake in the box. Store your cake in the coolest room, you can use a fan to oscillate the air. 

Never place your cake near a window, radiator, heat or bright lights or where the sun can shine on it. Keep the cake in the box until you need to use it or display it, you can use tea towels that has been in the fridge to cool the cake box down if its really hot.

Never put your cake or cupcakes in the fridge unless stated. It will dry your cake out. 

 

Your cake is always best consumed on the day of your event, but you may keep your cake longer but store it correctly, you can portion & wrap it up. Cakes over time lose the moisture and air will dry the sponge out.

Cupcakes are best consumed on the day of collection

 

IMPORTANT

Take care when adding candles to your cake as it could touch another decoration on your cake.

 

Inform the venue of anything that is NOT edible on you cake to ensure it is removed before slicing and serving. All non-edible items are listed on your care sheet when you collect your cake.

 

Allergies must be stated before ordering. My kitchen is not allergy free. I do not bake allergy free cakes.

 

Cakes will be put on social media and displayed feel free to tag and share your cake pictures with me.

Icing figures may contain cocktail sticks please remove these before eating. Do not allow a child to bite straight into any edible figures on your cake.

CAKES IN HOT / WARM OR HUMID WEATHER - IMPORTANT INFORMATION

 

DRIP CAKES - Or fondant cakes ( all cakes have buttercream under fondant too)


✓ Have air con on in the car. Windows closed, cake does not have sunlight on it. Cake must be always kept completely flat any movement will affect your cake and it can slope and melt. Your car seats are not flat.


✓ Your Cake is all buttercream on the outside and may have chocolates this can and WILL melt if not stored correctly


✓ Keep the cake in the coldest area of your home. Away from direct sun / heat, windows. You Must keep your cake cool. You can use ice packs around the base of a cake box or using a fan to keep the cake cool with frozen water bottle in front the fan, is a great option to circulate the air.


✓ Please make sure you display the cake as close to the birthday candle part, or as close to it needing to be on display to reveal to guests, or to cut. The longer the cake is left out when the room / venue is warm or humid the more chance of the structure and stability of the cake melting or sloping. Outdoors in hot weather is not recommended.


✓ I do not have air con therefore it is a baker’s nightmare in this weather and each cake takes twice the normal time to complete. There may be slight changes to the design due to things not working well in this heat.


✓ I am not held responsible for any damage to cakes once the cake has been collected. All cakes are made and stood in the coolest part of my kitchen for several hours, during this time the cake has been made, decorated, left to set, pictures taken, boxed up all with the fan going. So, it has time for everything to adhere and become stable.


✓ Cakes do NOT last as long as they would normally in this weather so its best to use the cake as soon as possible.


✓ The weather is something out of our control, Butter melts and as much as I can do to prevent this, I cannot control the heat and humidity in venues or homes. So, it is your responsibility to make sure the cake is left alone and moved only when needed.


✓ IF you really feel that your cake is melting/ sloping with the humidity feedback from other customers have done the following and its helped. But this is not something I am responsible for; this is your choice. It is not my advice or recommended but if it helps save your cake it might be worth it. It is your personal choice. Place it in the fridge for short periods of time to help stabilise it, you can take it out just before you show the guests whilst it is still quite cold and before it gets condensation on it. Do the birthday song, then take the cake away leave it to settle to room temp then slice. The cake sponge will not be as soft when it first comes out the fridge until it reaches back to room temp.

BUT your cake will need to be shown and cut asap as condensation will start to form, and some of the decorations may wilt when this happens.


I have never had a cake melt or collapse by customers following the information, which is on the collection email in a pink button you can click and read. There are no refunds given on cakes. Once collected “your cake” is “your responsibility.
